Buffalo Chicken Calzone

This fun recipe is one of my all-time favorites. I’ve always loved ordering calzone’s at restaurants but always thought it would be too difficult to recreate at home. BUT nothing is impossible and I was 100% overthinking the level of difficulty. This recipe is great for families who want to get their kiddos involved. Just like “build your own pizza” is a hit with birthday parties and family bonding, “build your own calzone” is a fun and easy twist as well! *caught caught* Buffalo Chicken Calzone will always be star of the show! Servings: 4

Ingredients:

-2 ½ cups shredded Mozzarella cheese

-1 rotisserie chicken from your local grocery store

-1/2 cup franks red hot buffalo sauce (or any buffalo Sauce you prefer)

-1/2 cup of ranch dressing

-1 large fresh pizza dough

-1 tbsp olive oil (or cooking spray)


Directions:

  • Start off by preheating the oven to 400 degrees.

  • Set whole chicken on a cutting board and begin to cut out the meat and place in a large bowl. I like to use my hands during this part because I find it easier to shred the chicken as I’m pulling it off the bones.

  • Once you have taken all the desired meat off the bones add buffalo and ranch sauce to the bowl of shredded chicken. Mix well to ensure all chicken is covered. At this point yes you may take a bite because it is simply irresistible! Set chicken filling to the side.

  • Pull out a baking sheet and cover with foil, drizzle olive oil on surface of the pan.

  • Dust some flour on a new cutting board and set fresh dough on top. With a knife cut ball of pizza dough into 4 equal pieces.

  • Take one piece of pizza dough and pull/stretch without tearing until you've formed a small sized pizza round that can fit some filling.

  • First add some cheese then chicken mix, and then cheese on the top again.

  • Fold the dough over the stuffing and pinch the edges shut. Make sure they are sealed as best as you can so that you don’t have content falling out.

  • Repeat this with the other pieces of dough. Once the dough has been stuffed, place each calzone on the greased baking sheet, brush each with a little olive oil and pop in the oven for 17-20min.

Of course like all recipes you can substitute some ingredients to your preference. Instead of buffalo chicken you can do cheese and pepperoni with tomato sauce. Or even and yummy chicken and cheese with Alfredo sauce! For my vegetarians out there you can substitute the buffalo chicken and make a delish spinach and artichoke stuffing with sun dried tomatoes!
