This dish is a treat. It’s not something you make but here and there….its Special! Everything tastes good with a little bit of bacon, am I right!? Well this is a dish my mom has made me throughout my childhood in which I would devour after a long night of soccer or swim practice. It. Is. PHENOMENAL! I usually make a big batch because I promise you won’t just have one bowl. This recipe is great for big families or very hungry bellies. It’s a little bit of a challenge at first but once you nail it you will want to share it with everyone!!!

Ingredients:
-1 package of linguine
-3 eggs
-1 package of bacon, chopped
-1 tbsp of minced garlic
-3/4 cup of Parmesan cheese
-salt & pepper to taste
Directions:
Start by boiling water in a large pot for the pasta. While that’s heating up, chop the bacon into small cubes. Add pasta to the boiling water and also add 1 tbsp of salt to the water. Stir.
In a medium skillet on medium-high heat cook bacon, once cooked set aside in a bowl.
Drain pasta and keep in strainer.
In the pasta pot over low heat add olive oil, garlic and half the cooked bacon. Stir and add the pasta back into the pot, mix.
In a small bowl beat eggs. Now this is the tricky part so you got to work fast. Don’t turn the stove top off and pull the pot off the heat and slowly add half the beat eggs into the pasta pot and begin to fold and stir everything together. The point here is to not scramble the eggs (reason we got off the heat) but if it’s not warm enough the eggs won’t temper. So you have to try and meet this happy medium.
Add the other half of the beat egg into the pot and continue to mix and mix and mix. You may put your pot over the heat again if you feel like the egg isn’t getting cooked. You want almost a creamy mixture.
Once that is complete season with salt, pepper and Parmesan and extra bacon on top. Enjoy!
Of course like all recipes you can substitute some ingredients to your preference. This one is a bit more difficult to alter because it’s just so delicious in itself. I’ve heard of restaurants substituting the bacon for prosciutto which is like a Spanish bacon. You can add some spinach or broccoli as a veggie.
