Fresh Fiesta- Mexican Street Corn


HURRY! Cinco de Mayo is right around the corner and this easy recipe will put you in the fiesta mood. I can say that I’ve never really raved about Mexican street corn UNTIL, my coworker brought this dish in for one of our potlucks. It is the most simple and refreshing side to round out your Taco Tuesday night. You can adjust the ingredients to your preference so all my picky eaters can enjoy!! I’ve added some substitutions to some of the ingredients as well. You this yummy side doesn't only task good with mexican food but you can also have it with grilled chicken, steak, shrimp kabobs, and much more. Here are the details :)

Time: 15 min

Servings: 4-5 as a side

Ingredients:

-4 ears fresh corn, grilled & shucked (approx. 3 cups)- OR 1 bag of frozen corn (cooked as directed on bag)

-2 Tbsp. Mayo

-2 oz. Cotija cheese, finely crumbled (or plain feta)- OR 2 oz. queso blanco

-½ cup finely sliced scallion greens

-½ cup fresh cilantro leaves, finely chopped

-1 jalapeno pepper, seeded and stemmed, finely chopped- OR 1 poblano pepper, seeded and stemmed, finely chopped

-1-2 medium cloves garlic, minced- OR garlic powder

-1 lime, zested and juiced

-1 tsp Chili-lime powder

-Salt & Pepper to taste

Directions:

1. Cook or grill corn. Drain and cool on paper towel.

2. Dice pepper, onion, and cilantro, set aside.

3. For the dressing, put mayo, lime zest, lime juice, garlic, and chili-lime powder into a large bowl and whisk until creamy.

4. Cut the corn off the cooled Cobb and add to the large bowl of dressing.

5. Mix the above ingredients. Add salt if you’re feeling salty.

6. Crumble cheese on top and add extra chili-lime powder and cilantro for garnish.


Like any recipe you can make this your own by adding other tasty ingredients to your liking. Some suggestions can be beans, diced tomato, avocado, sour cream, hot sauce or salsa! I really hope you enjoy this fresh fiesta in a bowl as much as I do.
