Crisp Cucumber Salad


Yummy in my Tummy

Talk about REFRESHING!!! This quick and easy salad will have your taste buds dancing. I have to give credit to my amazing mother in law you introduced me to this recipe when I first started dating my husband. This side dish is tasty add to any dinner menu or as a nice light snack on a hot summers day. This is always my go to dish for potlucks or dinner parties because it’s a delicious and easy way to win a crowd.


Time: 10 minutes

Servings: 7 as a side, 2 if you’re eating it as a main

Ingredients:

-2 cucumbers, cut into cubes

-1 box of grape tomatoes, cut in halves

-2 avocados, cubed

-3/4 cup of mozzarella pearls

-1/4 cup of chopped cilantro

-1 tbsp of cumin

-2 tbsp of olive oil

-4 tbsp red wine vinegar

-salt & pepper to taste


Directions:

· Add cucumber, tomatoes, avocado, mozzarella and cilantro into a medium bowl.

· Add two pinches of salt and pepper to the mix, with the cumin, olive oil and vinegar.

· Toss the salad until everything is coated evenly.

· Cover and place in the refrigerator for 20-30 min (optional but recommended) so that the salad has time to absorb the juices and gain flavor.

Voila Enjoy!!!


Of course like all recipes you can substitute some of the ingredients to your preference. If you like some heat, add some chopped jalapenos to the mix with a dash of cayenne pepper. If you like more of a crunch throw some chopped celery or shredded carrots. My hubs hates onions….but that’s great add to pack a punch of flavor.
